Comfort Food Traditions: Three Classic Recipes
Food often carries the deepest family traditions, connecting generations through comforting aromas and rich flavors. From viral sensations to holiday staples, traditional recipes bring warmth straight to the kitchen table.
Shredded Chicken Soup
This soup became a massive social media hit after being featured on television. The daughters of Einav used to ask their grandmother to prepare it every time they visited on Saturdays. Einav learned the recipe and carried on the tradition, making it a staple for home cooks everywhere.
Ingredients:
-
500g chicken breast
-
2 carrots, peeled and diced
-
4 potatoes, peeled and diced
-
1 small celery root (diced) along with stems and leaves (chopped)
-
2 zucchini, cut into large chunks
-
1 tsp turmeric
-
1 tbsp chicken soup powder
-
Salt and black pepper
-
1/4 cup fresh cilantro, chopped
Instructions:
Place the chicken breast and all vegetables in a large pot, adding water to cover. Bring to a boil, cover, reduce heat, and simmer over medium heat for about 45 minutes. Remove the chicken breast and shred it using a fork. Partially mash the vegetables in the pot using a potato masher to create a thick texture while leaving some chunks intact. Add the turmeric, soup powder, salt, and black pepper, then stir. Return the shredded chicken to the pot, mix well, and bring back to a boil. Sprinkle with fresh cilantro and serve hot.
Grandma Marcel's Meat Pie
For as long as Einav can remember, this rich meat pie has been served after the Yom Kippur fast at Grandma Marcel's home, accompanied by matbucha and mayonnaise-dressed eggplant salads. Though fitting for any Friday dinner or holiday, it remains the ultimate post-fast comfort food.
Ingredients:
-
1kg beef stew meat (long-cooking cut), finely diced
-
4-6 medium onions (1kg), finely chopped
-
1 large potato, peeled
-
Salt and black pepper
-
10 eggs
-
1/2 cup oil
Instructions:
Combine the beef and onions in a wide pot. Add water to cover and cook uncovered for two hours until all the liquid evaporates and the meat is tender. Strain and transfer to a large mixing bowl. Boil the potato until fully tender, drain immediately, and mash thoroughly before adding to the meat mixture. Season with salt and pepper. Whisk in the eggs, two at a time, mixing continuously. Heat the oil in an oven-safe pot over high heat, pour in the meat and potato mixture, and flatten the surface. Cover and cook on the stove for 20 minutes. Meanwhile, preheat the oven to 200°C (top-bottom heat). Transfer the pot to the oven and bake for 30 minutes until beautifully browned.
Semolina Orange Cake
One of the recipes Einav is most proud of, this cake always steals the show at family gatherings and weekend meals.
Ingredients (for a 30x15 cm oval pan):
-
5 eggs
-
1 cup (200g) sugar
-
1 cup (240ml) oil
-
1 cup (240ml) orange juice
-
1 tsp vanilla extract
-
1 cup (200g) semolina
-
1 cup (140g) flour
-
1 cup (90g) shredded coconut
-
1 package (80g) instant vanilla pudding mix
-
1 packet (10g) baking powder
For the Syrup:
-
1/2 cup (100g) sugar
-
1 cup (240ml) water
-
1/2 cup (120ml) orange juice
-
1 tbsp lemon juice
-
1 tsp vanilla extract
Instructions:
Prenheat the oven to 180°C and grease a baking pan. Whip the eggs and sugar together until light and fluffy. Gradually blend in the oil, orange juice, and vanilla extract. Reduce mixer speed and fold in the semolina, flour, coconut, pudding mix, and baking powder until smooth. Pour into the prepared pan and bake for 30-40 minutes until a toothpick inserted in the center comes out clean. While the cake bakes, prepare the syrup by boiling the sugar, water, orange juice, lemon juice, and vanilla in a small pot for about 5 minutes until slightly thickened. Pour the hot syrup evenly over the warm cake immediately after taking it out of the oven.
