Easy recipe for a festive baked sweet potato salad

Ingredients:
2 medium sweet potatoes, cut into cubes
3 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
3 tablespoons sweet chili sauce
1½ tablespoons sesame seeds
1 tablespoon chopped parsley
A handful of toasted sliced almonds, for serving
Preparation method:

Preheat the oven to 200 degrees and line a baking tray with parchment paper.

Mix the sweet potato cubes with the olive oil, salt, and black pepper.

Spread the sweet potatoes on the tray in an even layer.

Bake for about 20 minutes, until the sweet potatoes are soft and nicely browned.

Add the sweet chili sauce, sesame seeds, and parsley, and mix gently.

Transfer to a serving plate, sprinkle the toasted almonds on top, and serve.
