This recipe by Keren Agam is for three large challahs, and there is also an honest recommendation: the first one is finished already on Friday afternoon with schnitzel and matbucha sandwiches or just with tahini and honey. The second one is saved for the meal, and the third one is tried to be hidden for Shabbat morning (if you are a relatively small group, it will be easier). In any case, they are exactly what is needed to wipe up the sauce of the roasted fish you will prepare.

Lettuce salad with a perfect vinaigrette. There is no doubt that the lettuce must be fresh and crispy, but when preparing a green salad, the dressing is paramount. An unbalanced or imprecise vinaigrette will yield a salad that no one wants to eat, and the dressing in this recipe is built on the right ratio of olive oil to vinegar, with mustard that holds the emulsion and a little sweetness that balances everything. Just remember a few iron rules: the leaves must be completely dry, the dressing is poured over in a measured amount, and this and gentle mixing are done just a moment before serving.
