Even Carine Goren begs for recipes from friends
And it's a good thing Anat shared her recipe for apple cake

It's not just us who have old pages with recipes we managed to extract from friends — it turns out Carine Goren has them too. Anat's apple cake is packed to the brim with apples, pecans, and raisins; it is a homemade cake full of soul that will fit perfectly for the upcoming holiday season.
Ingredients:
-
4 large apples (green, sour)
-
3 eggs (size L)
-
1.25 cups of sugar (250 g)
-
0.75 cups of oil (180 ml)
-
0.25 cups of water or brandy (60 ml)
-
1 tsp of vanilla extract
-
2 cups of flour (280 g)
-
1 bag of baking powder (10 g)
-
1 tsp of cinnamon
-
1 cup of whole pecans (100 g)
-
1 cup of raisins (150 g)
Preparation method:
-
Preheat the oven to 160 degrees (recommended baking program — turbo).
-
Peel and cut the apples into cubes. Set aside.
-
In a bowl, whisk the eggs and sugar for half a minute (no need to whip into a foam). Add the oil, water (or brandy), and vanilla extract, then whisk to combine.
-
Add the flour, baking powder, and cinnamon. Mix into a thick batter just until the flour is incorporated.
-
Fold in the pecans, raisins, and apple cubes. It may look like a small amount of batter for a large amount of apples, but that is perfectly normal.
-
Grease a pan and spread the batter evenly.
-
Bake at 160 degrees for 50 minutes until browned (a toothpick should come out dry).
-
Cool slightly and serve warm. Keep wrapped in the refrigerator (wrap only after the cake has cooled completely) and heat each slice in the microwave before serving. And you don't really need me to tell you that this cake goes beautifully with ice cream, right?
