Beloved Jerusalem Hills Bakery-Restaurant Closes Its Doors
After three years of operation in Park Kramim, Kiryat Anavim, 'Noa - Local Baking' has officially announced its permanent closure. The owners expressed their gratitude to the loyal customers who supported them throughout their journey.
Eldad Shmueli is a pastry chef well-known to food lovers across Israel. He honed his craft in Tel Aviv’s top kitchens, including 'Claro' by Ran Shmueli, 'Abraxas North' by Eyal Shani, and 'Herbert Samuel' during the Yonatan Roshfeld era, while also gaining experience abroad. In 2016, Shmueli left the Tel Aviv bubble to open 'Elhanan - Bread Culture' in Kibbutz Mishmarot. The bakery and bistro, dedicated to his father's memory, became a culinary destination famous for its sourdough breads and signature knafeh croissants.
In the summer of 2023, following his departure from 'Elhanan', Shmueli launched a new project: 'Noa - Local Baking' in Kiryat Anavim’s Park Kramim, named after his mother. Initially a boutique bakery and cafe, the venue later expanded into 'Noa Bistro' for evening service. With its white tablecloths and high-end cuisine, the bistro gained significant media attention and became a preferred destination for diners during the war, offering a refined escape outside the city.
Last April, it was reported that Shmueli had decided to leave the project. Three months later, an official closing announcement was posted on the restaurant's Instagram page. It has emerged that Shmueli’s departure followed his exit from the partnership, though the business continued to operate for a time afterward. Two weeks ago, the restaurant closed abruptly, and today the owners updated their customers:
«The decision was not simple, but it came after much thought. We are ending this chapter with great gratitude.»
The combination of a rural atmosphere, a scenic mountain-view balcony, and exceptional cuisine made 'Noa' a standout. As critics noted, it was the type of establishment that never required the 'periphery' discounts often associated with restaurants outside the city center.
