Chocolate-honey mousse cake by Carine Goren. One of Carine Goren's long-standing recipes, to which we have been loyal for many years. The base is rice krispies with butter and chopped chocolate, and the filling is a velvety chocolate mousse with egg yolks and honey. This is a no-bake cake for those whose oven is busy with a million other dishes. For those worried about raw eggs, there is no need to worry: the yolks are whipped with boiling honey, so there is no risk of bacteria.

Date and pecan cake. One of our favorite cakes by Miri Tzadok from the blog 'Cake for Shabbat'. Unlike the previous cake, this is a batter cake and very easy to prepare. The texture is moist and airy, the dates add sweetness and the pecans improve the result even more. A tall and beautiful cake, which we hope will represent the year coming upon us for the good.

Upside-down caramelized apple cake. A winning fruit cake, based on a generous layer of apples wrapped in caramel that turns after baking into a spectacular and incredibly delicious crown. A recipe by Chen Shukron.

Honey cake by Miki Shemo. A moist and delicious honey cake. Egg white foam ensures it comes out tall and airy, while a small amount of cocoa and instant coffee powder adds color and depth of flavor. Fifteen minutes of work — and you have three oblong pans in the oven (or one round one).

Almond cream and apple pastry. The almond cream, which is actually the dough of this cake by Carine Goren, can be prepared up to a week in advance, which incredibly shortens the preparation on the holiday eve. On the other hand, keeping such a cream in the fridge and not snacking on it with a spoon every time until you reach the bottom sounds impossible.

Light cheesecake and Lotus. An easy-to-prepare Lotus cake that manages to combine caramelized Lotus cookies twice — both in the crumbly bottom and in the topping, which is actually Lotus spread softened in the microwave. In between: a sweet, creamy and soft white chocolate cheesecake.

The best cake in the world. A third and final recipe this time by Carine Goren — a high layer cake in a royal style, which originates from Norway but can fit like a glove for a good Rosh Hashanah meal. The layers consist of batter, meringue and cream, and the result is both insanely impressive and delicious to a level that is hard to explain.

Chocolate mousse and Nutella tart. We started with a no-bake cake and we will finish with another one — a winning tart with chocolate mousse and Nutella, very easy to prepare from available and simple ingredients. The base is composed of ground biscuits with the addition of nuts, and the filling is simply a Nutella ganache, into which whipped cream is folded. Happy holiday!
