Glass Noodle Salad

A recipe from the wonderful Racheli Krot is a promise of an excellent dinner; now, all that's left is to choose your direction. In our case, the direction must be cold (thankfully, we have no interest in turning on the oven today), tasty, and filling. This glass noodle salad with vegetables, peanuts, and pomegranate seeds (or any other fruit) in a chili sauce is refreshing, healthy, colorful, and bursting with flavor—truly requiring zero effort. Need your chicken? Sear half a kilo of ground chicken in a pan and mix it in.

Chicken and Cucumber Salad

There are salads that serve as a side dish, those that are a full meal, and those that are both a full meal and insanely delicious. Crunchy baby cucumbers and green onions, combined with shredded chicken breast, are wrapped in an Asian peanut butter sauce. It features a perfect balance of lime acidity, soy saltiness, a sweet touch of silan, and a small heat kick from ginger and crispy chili oil. It is a fresh, rich, and addictive salad—exactly what you want on hot evenings.

Brown Rice Salad with Feta and Walnuts

Those in the know tend to mix their rice with a vegetable salad, but this recipe goes a step further by including the rice from the start, along with cucumbers, tomatoes, and onions. It elevates the dish by adding feta cheese and walnuts, making it a wonderful summer meal for any time of the day.
