3 quick lunches for a lazy week at the end of August
Does the need to cook in the final days of summer vacation feel like an existential threat? We have collected 3 lunches that don't ask for much but give a lot: juicy chicken ready in a Ninja in 10 minutes, salmon and rice in one pot that is a complete meal, and a basic, killer shakshuka.

Salmon and rice stew
There are dishes that require concentration, supervision, and a pile of dishes in the sink, and this one requires the exact opposite. 5 ingredients, not a drop of drama, everything goes into one pot: rice, carrots, and salmon chunks. Half an hour later, a complete meal awaits you that needs no additions (okay, add a small salad on the side, don't be stingy with yourselves). It is also an excellent pot for meal prep, if you are into that.
Chicken breast in a Ninja
Can't let go of the chicken concept? Get the chicken recipe that holds a world record for the least amount of work per bite, and it is prepared — how else — in a Ninja grill. How do you do it? Mix oil, soy sauce, and two and a half more ingredients in a bowl, put the chicken breast in, and leave it for as long as you have. No time at all? That is also fine. Transfer to the Ninja, 10 minutes, hop, ready. And how juicy it is, that is the real miracle. The breast is served with rice left in the fridge, a salad, or even just a few sliced cucumbers.

If there is a dish that was born for tired days, it is Eyal Shani's shakshuka. It does the opposite of what we are used to, and strips away layers in a 'less is more' atmosphere. One pan, a few tomatoes, and a few eggs broken inside — and that's it, a hot and comforting meal that feels much more invested than it really is.
