1990s Creamy Peppercorn Sauce Makes a Dramatic Comeback in Israel
The iconic 1990s creamy black pepper sauce is making a massive culinary comeback across Israel, with restaurants like Vitrina leading a viral TikTok trend by drenching gourmet burgers in rich peppercorn sauce.

The iconic creamy black pepper sauce from the late 1990s is making a dramatic comeback across Israeli restaurants, driven largely by viral TikTok trends. Once a staple of non-kosher gourmet steakhouses, the rich peppercorn sauce is now being reimagined primarily as a decadent topping for gourmet burgers.
Among the pioneers of this nostalgic revival is the Vitrina burger chain, which recently introduced the Au Poivre Burger. Priced at 57 NIS, the dish features their classic burger topped with aioli, Gouda cheese, and caramelized onions, served halved in a generous pool of rich, creamy peppercorn sauce. Reviewers note that while the dish requires a short wait—up to 25 minutes during peak hours—the harmonious balance and velvety sauce make it a standout addition.
Other notable establishments have also embraced the trend. Centro, Palette Bistro, Tavi's, and GDB have incorporated similar creations into their menus, while Yumngus has dubbed its version the "British Burger" priced at 95 NIS. In Rehovot, Cafe Caesar serves a hanger steak skewer with a beef stock and cream reduction, whereas Bel Ami by the Yerzin brothers adds a touch of cognac to the sauce, offering an upscale burger for 98 NIS and a classic steak with fries and peppercorn sauce for 230 NIS. In Haifa, Hamudi Okala’s Lululeesh skewer bar has similarly introduced a split burger drenched in the creamy sauce.
Culinary critics point out that this retro revival offers a refreshing departure from heavily overloaded modern burgers. The sauce provides a rich yet surprisingly balanced profile, leaving diners eager for French fries to mop up the remaining sauce. Whether enjoyed in Tel Aviv or Haifa, the 1990s culinary throwback has officially captured the local palate once again.
