Itay Shalev, one of Israel's most respected chefs and a pioneer of local, seasonal cuisine, has reached a major career milestone with his appointment as executive chef of the Mamilla Hotel in Jerusalem. He will now lead the culinary operations of this luxury lifestyle hotel.
Shalev is currently developing new menus for the hotel's two signature dining spots: the Mediterranean fish restaurant "Happy Fish" and the "Rooftop" restaurant, which blends Asian influences with contemporary local flavors. Alongside this, he will oversee a refresh of the hotel's breakfast offerings and curate Friday meals that balance tradition with a modern, surprising culinary experience.
Shalev brings to his new role an exceptional background as both executive chef and sous-chef at groundbreaking restaurants in Israel and abroad. His career also includes experience as a chef for luxury hotels and large-scale catering systems, as well as extensive work in food product development and culinary innovation.
