René Redzepi, the chef of the restaurant Noma who resigned five months ago following the publication of allegations regarding abusive behavior towards employees, is returning to the establishment, though he will keep his distance from the kitchen. According to a report in the Wall Street Journal, 48-year-old Redzepi will serve as a consultant and creative director for the restaurant, which reopened today (Wednesday) in Copenhagen.

Redzepi was among the founders of Noma in 2003 and led it to win the title of the world's best restaurant multiple times. However, in March, a New York Times investigation revealed a pattern of abuse, including repeated violence and public humiliations. Following the report, he resigned, stating that he was "taking full responsibility for my actions."

Only five months later, he is returning in an attempt to reinvent Noma not just as a restaurant, but as a research and development center for the culinary world. The revamped venue, which opened under new management and without the three Michelin stars held by the original, offers a tasting menu priced at $700 per diner, including a monthly rotating bottle of wine.

The new head chef is Pablo Soto, who admitted that the past allegations regarding kitchen conduct add significant pressure to the role:

"People are watching us, and they are not necessarily focusing on the menu but want to see how people behave. I have a heavy responsibility to ensure that we do not return to the patterns of behavior of the past, but that will not prevent us from forming a team that will work very hard."

Soto emphasized that it remains Redzepi's restaurant, noting that he has simply "moved to focus on other creative ventures." In his capacity as creative director, Redzepi claims he will focus on "Noma 3.0," a vision for the future where the restaurant "evolves and becomes a kind of brain of the food world." The plan includes research into new fermentation methods and ways to integrate algae and insects into our diet.

"We have several long-term projects that we are working on," Redzepi said. "Some of them I prefer not to talk about because I have superstitions about these things."
