Ingredients
For the beef:

500g lean steak, sliced into thin strips

2 tsp cornstarch

1 tbsp oyster sauce

2 tsp soy sauce

½ tsp baking soda

¼ tsp white pepper
For the noodles:
- 690g frozen udon noodles (or 250g thick egg/rice noodles)
For stir-frying:

½ tbsp avocado oil (or other neutral oil)

5 minced garlic cloves

2 tsp ginger paste

1 small brown onion, thinly sliced

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

200g sliced button mushrooms

4 green onion stalks, cut into segments

5 dried chili peppers or ½ tsp chili flakes
For the sauce:

2 tbsp soy sauce

2 tbsp dark soy sauce

2 tbsp coconut sugar
-
2 tbsp cooking wine
-
½ cup low-sodium beef broth
-
2 tsp cornstarch
-
¼ tsp white pepper
For serving:
- Toasted sesame seeds, chopped green onion, chili flakes.
Preparation

Mix the beef strips with the soy sauce, cornstarch, baking soda, and white pepper. Let marinate for 15 minutes. Meanwhile, mix all sauce ingredients in a separate bowl.

Prepare the noodles according to the package instructions, drain, and set aside.

Heat a wok or wide pan over high heat with a little oil. Sear the beef in batches for 1–2 minutes per side until browned. Remove to a plate.

In the same pan, fry the onion for about 2 minutes. Add garlic, ginger, and chili; cook for 30 seconds until fragrant.

Add bell peppers and mushrooms; stir-fry for 3 minutes until softened but still crunchy.

Return the beef to the pan, add the noodles, and pour in the sauce. Mix well and cook for 2 minutes until the sauce thickens.

Add green onion, mix once more, and serve topped with toasted sesame seeds and chili flakes to taste.
