How to Make Delicious Stuffed Meat Pitas at Home
Discover how to make soft, fluffy stuffed meat pitas at home with spiced minced meat, sesame seeds, and tahini. A delicious and surprisingly simple recipe.

Soft and fluffy yeast dough, channels filled with spiced minced meat, sesame seeds on top, and tahini or matbucha on the side: these meat pitas look elaborate and taste even better, yet making them is not complicated at all. Here is how you do it.
Ingredients: 500 grams of sifted white flour, three-quarters tablespoon of dry yeast, quarter tablespoon of salt, 2 tablespoons of white sugar, 3 tablespoons of olive oil, and one and a quarter to one and a half cups of lukewarm water.
Preparation method: First, prepare the dough by mixing the flour, yeast, salt, sugar, and olive oil in a mixer with a dough hook. Gradually add the water until the dough stops absorbing it, and knead for about 7 minutes until smooth and soft. Grease the dough with a little olive oil, cover with a towel, and let rise in a warm place for about an hour and a half.
Release the air from the dough with a few punches and let it rise again for about an hour. Meanwhile, prepare the filling by mixing the meat, onion, and spices in a bowl, then transfer the mixture to a piping bag. Preheat the oven to 180 degrees Celsius.
Divide the dough into four portions and roll them out into plump flatbreads, or alternatively, make one large family-sized pastry. Using chopsticks, create channels in the dough, deepening and reinforcing them with your fingers. Pipe the meat mixture directly into the channels.
Brush the exposed parts of the dough with beaten egg and sprinkle with sesame seeds. Bake for about half an hour, remove from the oven, and immediately cover with a clean towel for 10 minutes so the steam softens the dough. Serve with tahini, matbucha, or both.
