One of the most iconic and impressive locations in Jerusalem is opening a new chapter: the Rooftop restaurant at the Mamilla Hotel has reopened with a fresh culinary concept and an updated menu, created by the hotel's incoming chef, Itay Shalev. The restaurant, situated facing the breathtaking panoramic view of the Old City walls, offers a hospitality experience that combines contemporary Israeli cuisine with international influences.

The new menu built by Chef Shalev places local and seasonal raw materials at the center, while maintaining simplicity, precision, and respect for the ingredients. At the heart of the kitchen stands the Josper oven, which gives aged meat cuts and fish depth of flavor, juiciness, and a unique smoky aroma.

A taste of the new menu includes appetizers such as red tuna tartare with celery and pistachio gremolata, refreshing sea fish ceviche with mango and ajo blanco, and sirloin strips in a demi-glace, sake, and soy sauce.

Main courses include beef fillet served with root vegetable cream and Jerusalem artichoke, handmade tortellini filled with sweet corn polenta, and barramundi fillet with crispy skin alongside green vegetables, roasted tomato cream, and pastis.

A complementary experience includes original desserts, a meticulous cocktail menu, and a wine list selected specifically to blend with the atmosphere on the roof.

"Rooftop is one of the restaurants with the most unique location in Israel," notes Chef Itay Shalev. "Our vision was to create a kitchen that respects Jerusalem, the raw materials, and the seasons. We built a contemporary, precise, and accessible menu that allows one to enjoy an extraordinary meal in front of one of the most beautiful views in the world."

The Mamilla Hotel management adds that the reopening is part of a broad concept to continue leading the hospitality and food scene in the city, and to provide a meticulous culinary destination intended for both hotel guests and the local public and visitors to Jerusalem.
