Eyal Shani's culinary empire reaches the West Coast for the first time: over the weekend, the new branch of the kosher restaurant "Malka" was launched at the prestigious SIXTY hotel in Beverly Hills, Los Angeles, ahead of its official opening to the general public on September 1st.

Alongside the local menu, which combines agricultural produce from California with familiar dishes like the schnitzel stuffed with mashed potatoes and flattened eggplant with tahini and yogurt, what stirred social media was actually the unusual serving performance by chef Eyal Shani. During the opening event, Shani spread hot hummus with his bare hands directly onto the guests' wooden tables.

Videos from the evening drew stormy viral reactions. Many users expressed aversion to the direct contact without gloves and even compared the style to street stalls in India. On the other hand, experts and diners came to the chef's defense and clarified that working with bare, clean hands is an accepted, safe, and completely professional standard in elite kitchens and Michelin-starred restaurants around the world.

The new branch in Los Angeles joins the chain of branches that began in Tel Aviv and expanded to Manhattan and Brooklyn. The restaurant will operate under full kosher supervision and will be closed in accordance with the law on Fridays and Saturdays.
