More and more chef-led restaurants are opening in hotels
The trend of restaurateurs opening venues in boutique hotels is reaching new heights as top chefs and culinary groups storm the hospitality market. "An excellent restaurant is not just a service for hotel guests, it is a destination in itself," say the CEOs of Fattal.
For several months now, restaurateurs and chefs have been opening their establishments specifically within hotels. It began with 'Pallet' in Jaffa, located in the 'Bazaar' hotel of the Fattal chain, and continued with 'Belle Ami', the Tel Aviv brasserie by the Yerzin brothers, which opened in the 'Reception' hotel on Dizengoff Square. Following that, the 'Bow' restaurant by chef Tomer Tal opened in 'The George' hotel in Tel Aviv. In practice, everyone wins: restaurateurs gain access to curated boutique hotels, and hotels receive high-quality dining services that attract potential guests.
This trend is clearly not accidental. Last week we visited 'Club Marine' by chef Avi Biton and the 'Popular' group at the 'The Yacht' hotel in Herzliya, which opened recently. Now we are awaiting the next major opening: a restaurant by chef Haim Cohen that will soon open in the new Isrotel chain hotel at 99 Dizengoff Street. It seems to be happening any moment now, and it is already impossible to walk down the street without stopping to admire it.
What else awaits us in this sector? The 'Hotel Lilienblum' of the Fattal chain is scheduled to open in March 2027, and it will feature a chef-led restaurant. Chef Amos Hayun is preparing to open a kosher meat restaurant at 'The Jaffa' hotel, while at the 'Platin' hotel, also belonging to the Fattal chain, a new restaurant by the 'Kiso' group is expected to launch in December 2026.
It has also been reported that a new chef's restaurant is expected to open in Rishon LeZion at the 'Raphael' boutique hotel, the city's first hotel located on the historic Rothschild pedestrian mall in a 19th-century building. The restaurant will operate throughout the day under the leadership of a renowned chef. In Herzliya, a new restaurant by Yariv Malili of 'Bet Thai' will open in the Isrotel chain's 'Publica' hotel.
The Fattal chain is undoubtedly the record holder, with 9 active hotel restaurants and 2 currently under construction.
