Dan Ben Shmuel, who started as a waiter at Benedict 13 years ago, has been appointed CEO of the restaurant group. In his first interview, he discusses the challenges of the restaurant industry, including the protection racket, rising costs, and the group's strategy to return to 24/7 operations and expand its hybrid bakery model.
