There are not many recipes that can make us truly crave tzimmes, but this one succeeds. True, it includes sugar (brown!), but also honey, cinnamon, orange juice, and the highlight — grated orange peel. Here is how to make tzimmes for your next celebration.

Ingredients:

  1. 1 kg fresh baby carrots

  2. 2 tablespoons oil or 20 g butter

  3. 3 tablespoons honey

  4. 2 tablespoons brown sugar

  5. 0.5 teaspoon cinnamon

  6. Salt to taste

  7. 0.5 cup orange juice

  8. 1/3 cup water

  9. Grated peel of half an orange

  10. 0.5 cup raisins

Preparation method:

  1. Wash the carrots well. If they are fresh and smooth, there is no need to peel them.

  2. Heat the oil in a wide pot and sauté the carrots for 3–4 minutes.

  3. Add the remaining ingredients and bring to a boil. Lower the heat to medium-low, cover, and cook for 25–30 minutes until the carrots are tender but still hold their shape. Remove the lid and reduce the sauce until it becomes thick, shiny, and coats the carrots perfectly.
