Ingredients:

1 package of defrosted phyllo dough

Oil spray or 200g melted butter

100g crumbled Bulgarian cheese

100g crumbled Hamed cheese

100g grated mozzarella

100g grated yellow cheese

1 large tomato, sliced

Instructions:

Layer the phyllo sheets one on top of the other, spraying oil between each sheet. This is the secret to perfect crispiness, so do not skip this step; you can also brush with butter if you prefer.

In the center of the phyllo sheets, place any cheese you have in the fridge. I used Bulgarian, Hamed, grated yellow cheese, and mozzarella—whatever was available. The flexibility to use what you have on hand is what makes this recipe so convenient.

Mix all the cheeses in a bowl and spread them in the center, ensuring a circular shape.

Arrange the tomato slices on top, sprinkle with a little salt, fold the edges inward to create a beautiful frame around the filling, and spray a little more oil over the entire pastry.

Bake in an oven preheated to 220°C (convection mode) for 20-25 minutes, until the phyllo is golden, crispy, and aromatic. A hot oven is essential to achieve that crispy exterior and perfectly melted cheese inside.
