How do you know if your honey is fake? The truth about home tests
Ahead of Rosh Hashanah, a plethora of videos are popping up promising to reveal within seconds if honey is real or fake, meaning diluted with various industrial syrups. But the truth is that no such test checks what is really important. So how can you (almost) ensure you purchased pure bee honey? Only this way.

Honey is one of the food products at significant risk of adulteration, and the fear of fake honey is entirely real. It is expensive to produce and easy to dilute with corn, sugar, or rice syrup. In a coordinated check by the European Union, 46% of 320 samples of honey imported into the EU were found suspicious following the identification of markers of foreign sugars.
In Israel, there is a standard defining when a product may be called honey: a product originating from flower nectar or plant secretions that bees collected, processed, and stored in a honeycomb. It is forbidden to add white or brown sugar, corn syrup, industrial glucose or fructose, preservatives, or food coloring. The water content in honey is also limited by the standard and generally should not exceed 20%.
When buying honey in retail chains — imported honey, whose entry into Israel is subject to import mechanisms and quotas (in recent years, special quotas have been allocated ahead of the Tishrei holidays) or local honey — it is impossible to know for sure that it meets the basic definition of honey or that it is not supplemented with sugar or corn syrup. There are quite a few online videos that promise to check if your honey is pure, but the truth is that there is no home method for testing for adulteration.
1. Heating over a flame
What to do: take a spoon and pour honey into it. Place the spoon over a stove flame. According to the test, real honey will caramelize smoothly, bubble gently, and darken gradually, while fake honey will make loud crackling sounds, foam, and smoke.
What is happening here: the crackling is water boiling and evaporating, so what is being tested here is the moisture percentage in the honey, not the more important question — whether sugar was added to the honey. The test is influenced mainly by the water content and how the material behaves when heated, so it cannot determine if the source of the sugars is honey or syrup.
2. Pouring honey into cold water
What to do: add a spoon of honey to a glass of room-temperature water, without stirring. The claim is that if the honey is real, it will sink to the bottom and maintain its shape as a lump in the water, while diluted honey will start to disperse and dissolve in the water and disappear after stirring.
What is happening here: this is a basic physics test: the density of honey is about 1.4 g/ml, that of water is 1 g/ml, so the honey sinks and remains clumped. Dilution with water can indeed change density, viscosity, and dispersion rate, but there is no threshold that allows saying that if it dispersed, it is necessarily fake. Modern industrial syrups are produced with viscosity and density similar to honey, and they pass the water glass test without a problem.
3. The match
What to do: dip the head of a dry match into honey and try to ignite it. According to the test, real honey will ignite steadily, and diluted honey will refuse to catch fire.
What is happening here: this popular test also does not check if there is honey in the jar — it checks how much water is in it. Real honey that contains more water might not ignite, while a sugary mixture with little water might ignite. Therefore, here too, the test is not significant for the source of the sugars. And it is not certain that you want to ignite a sticky substance in your kitchen.
4. The paper (or thumb)
What to do: drip a drop of honey onto absorbent paper or your thumb. According to the test, real honey will maintain the shape of a round and clumped drop, while fake honey will be absorbed into the paper and leave a wet ring.
What is happening here: this test also does not check purity, but moisture and viscosity. Natural and fully compliant honey with a higher water percentage will fail the test, and sugary mixtures can also be produced so that their viscosity and water content are similar to those of honey, so the test cannot distinguish between them.
So what does work?
The unpleasant truth is that there is no single home test that gives a definitive answer. Professional adulteration can only be identified in a laboratory test, using advanced analytical methods and sometimes a combination of several tests. So how can we, the home consumers, know what they are buying?

Read the label: the manufacturer's name, address, and phone number should appear on the packaging, as well as the type of nectar from which the honey was produced — citrus honey, eucalyptus honey, wildflower honey, etc. Beware of the phrase "honey blend": this indicates at the very least a low-quality product and sometimes a product that is not pure honey at all.

Look for a manufacturer's stamp or quality seal: a marking of a supervisory body on the packaging is an additional layer of security, because it means there is a control process behind it.

Understand the meaning of the price: producing pure honey costs money. If a jar is significantly cheaper than the competitors, there may be a reason for it.

Prefer a product with a clear source: a manufacturer or beekeeper that can be identified, a proper label, and clear manufacturer or distributor details.
And one more thing that is important to know: the Ministry of Health in Israel conducts tests for honey authenticity: in a survey conducted ahead of Rosh Hashanah 2025, all 10 samples tested, local and imported, were found to be compliant and in full accordance with the standard requirements.
A moment before you throw away the jar: crystallized honey is not fake honey — and this is one of the most common mistakes in the field. Honey that has crystallized in the cupboard, become grainy, and lost its liquid texture is not fake or spoiled. Crystallization is a completely natural process in which the glucose in the honey separates from the water and forms crystals, and it is greatly influenced by the botanical composition of the honey, not just the level of processing. Certain honey crystallizes quickly, and others remain liquid for a long time. Want it to return to being liquid? Place the jar in a bowl of warm (not boiling) water and give it a few minutes.
