The Cafe Greg coffee chain has launched a touching culinary initiative by reintroducing "Roni's Sandwich," a special dish dedicated to the memory of Staff Sergeant Roni Eshel z"l. Eshel served as an IDF observer in the 414th Battalion at the Nahal Oz outpost and fell during the October 7 massacre alongside many of her fellow intelligence operations room colleagues.
The Story Behind the Recipe
This special tribute was born after Roni's parents, Eyal and Sharon, shared her deep connection to the culinary world on her memorial page, publishing the recipe for the elaborate sandwich she used to prepare for them on Saturday mornings. The coffee chain management encountered the touching story and decided to adopt the recipe. The sandwich features a slice of brioche challah fried in olive oil, topped with a layer of cream cheese, thin tomato slices, avocado seasoned with lemon juice and salt, and a sunny-side-up egg fried in butter with a touch of freshly ground pepper. The dish is served at all chain branches nationwide from October 8 through the 30th, priced at 57 shekels.
Keeping the Legacy Alive
Eyal Eshel, Roni's father, shared with deep emotion that the dish has become much more than just a regular menu item. Roni's sandwich has become a huge hit and is in high demand across Cafe Greg branches, he noted, adding that many parents call him to say they are now preparing Roni's sandwich for their own children after seeing the initiative, which warms the heart.

As recalled, in March 2024, Roni's mother, Sharon Malka Eshel, published a moving post in the Service Managers' Branża Facebook group. Sharon, a veteran service management professional, chose to cry out the pain of bereaved families forced to confront callous institutional systems.
