A new neighborhood bakery named "Lehem" has opened in Beer Ganim, near Ashkelon, bringing Greek and Mediterranean baking traditions to the local community. Founded by Yan Harush, who previously launched the "Pat" Italian-style focaccia and sandwich bar in Ashdod, the bakery combines trendy Athenian aesthetics with classic neighborhood staples.

After spending a year traveling to Athens and Thessaloniki to research bakery designs and concepts, Harush decided to blend Greek inspiration with Israeli tastes. The bakery features custom stainless steel refrigerators imported directly from Greece, cozy seating areas, and a warm, minimalist design. The venture is truly a family affair, staffed by Harush’s relatives to serve a settlement that previously lacked a dedicated artisan bakery.

The display cases offer a wide variety of baked goods, including Roman focaccia, Gouda and parmesan cheese sticks, Turkish-style olive oil spiral borekas, carrot cake, and classic butter and chocolate croissants. The menu also features Italian sfogliatella imported from Harush's Ashdod venture, alongside elaborate sandwiches served on bagels, focaccia, or sourdough bread with fillings like egg salad with caramelized onions and crispy onion chips.

Bread shelves feature both everyday baguettes and rustic sourdough baguettes, as well as sourdough infused with za'atar and sumac, seed-loaded sourdough, and brioche burger buns. The bakery also offers homemade tiramisu, whole cakes, Greek yogurt parsnips, and local wines from the Golan Heights Winery, making it a vibrant culinary addition to the region.
